Palta a la reina de pollo (Avocado stuffed with chicken mayonnaise)






Ingredients:
1 chicken breast 
2-3 cups of water 
10 baby carrots
2 celery sticks
4 tablespoons of peas
3 tablespoons of light mayonnaise
romaine lettuce
2 hard boiled eggs 
1 avocado 
salt

Chopped baby carrots in half and celery sticks in small pieces. Put the 2-3 cups of water in the pan and add the chicken, baby carrots, and celery sticks, and a little bit of salt. Let it boil until the chicken is tender. 

Take out the chicken from the pan and shred the chicken with your fingers or fork. Take out the baby carrots and celery sticks, and chopped it small pieces. Put the shredded chicken, carrots and celery sticks in a bowl. Boil the peas in a small pot. Add light mayonnaise and mixed it with the shredded chicken, carrots, celery, and peas. 

Cut the avocado in half and take out the pit and peel them. Put half of the avocado on a plate, and add the chicken mixture on top. Cut romaine lettuce, sliced hard boiled eggs, and put it in your plate. Eat it and enjoy :)
