Lunch for my friend Connie 6/23/2014: Bibimbap and Chicken Soup


Chicken Soup


Ingredients: 
1 chicken breast
2 celery sticks 
carrots
2 green onions
1 cup of spinach 
1 egg beaten
4 cups of water 
1 tablespoon of less sodium soy sauce 
1 tablespoon of sesame oil 
salt
pepper

Chopped the celery sticks, carrots, and green onions. Add water in the pot and add chicken breast, salt, and pepper. Let the chicken breast boil until tender. Take out chicken breast and shred it. Leave broth in the pot. Put back shredded chicken pieces in the pot, and add celery stick, carrots, and green onions. Let it boil until vegetables are tender. Add spinach, soy sauce, and sesame oil. Stir the soup and it's done when all vegetables are cooked. 

Bibimbap


Ingredients:
1/2 pound of organic ground turkey
asparagus
broccoli
carrots
1 egg
2 cups of wild rice
olive oil

sauce for organic turkey
1 tablespoon of less sodium soy sauce
1tablespoon of sesame oil
1 teaspoon of brown sugar
1/4 tsp minced garlic


sauce for bibimbap
2 tablespoons of less sodium soy sauce
1 tablespoon of sesame oil
1 tablespoon of brown sugar
1 tablespoon of water
1 table of vinegar
