Pan Fried Salmon with Onions, Orange Bell Peppers, and Tomatoes




Ingredients:
two fillets of salmon
1/2 onion
1 bell pepper
1 tomato
1 tablespoon of less sodium soy sauce
1 tablespoon of vinegar
1 tablespoon of olive oil 
salt 
pepper

Season salmon with salt and pepper. Heat up oil in the pan in medium heat, and cook salmon for 8 minutes per side. 

In the same pan, add olive oil and add onions. Stir onions until transparent and then add bell peppers. Add tomato. When bell peppers and tomato are tender, add soy sauce and vinegar and stir. Let it boil twice and then it's done. Put this on top of pan fried salmon in a plate. Eat and enjoy.
