Peruvian Pollo Saltado (Chicken
Stir-Fry)
I like
learning how to cook Peruvian food because it is one of my favorite food.
Usually I make lomo saltado (beef stir fry) but this time I made it with
chicken. When you eat lomo saltado in Peruvian restaurants, you eat it with
fries and rice. When I make it for friends, I don’t make fries and they eat it
with brown or white rice but for the first time I made roasted potatoes for my
cousin.
Ingredients:
3
tablespoons of olive oil
1 organic
red onion
2 organic
tomatoes
3 chicken
breasts
2
tablespoons of soy sauce
2
tablespoons of rice vinegar or white wine vinegar
Himalayan
salt
pepper
Instructions:
1.
The
night before cooking, put the frozen chicken breasts from the freezer in a
plate and put it in the refrigerator and thaw it. But if you just bought the
chicken breasts and cooking right away, no need to thaw and put it in the
refrigerator.
2.
Cut
the onions and tomatoes in thin slices
3.
Take
out the chicken breasts from the refrigerator. Cut the chicken breasts in half
and then cut it in long strips. After, cut the long strips in three strips and
season it with salt and pepper.
4.
Turn
on the stove in high heat and when it’s hot, add 1 tablespoon of olive oil in
pan and then brown the chicken breasts. After browning the chicken, put it
aside.
5.
Add
one tablespoon of olive oil in the pan, add onions and cook it until it’s
translucent. Then add the tomatoes, and the chicken breasts. Mixed it all
together and low heat to medium heat.
6.
Add
two tablespoons of soy sauce, and add two tablespoons of rice vinegar to the
chicken.
7.
Mixed
it all together. Let it boil a bit, then turn off the heat and the dish is done.
Note: you
can use less sodium soy sauce and use 2 teaspoons for the olive oil, soy sauce,
and rice vinegar if you want to make the dish healthier.

Roasted Potatoes:
Ingredients:
6 baby red potatoes
Himalayan
salt
pepper
2
tablespoons of olive oil
Instructions:
1.
Wash
the potatoes and cut it in quarters.
2.
Put
it in a bowl and add two tablespoons of olive oil, salt, and pepper to the
potatoes.
3.
Preheat
the oven at 375 degrees
4.
Add
the potatoes in a baking pan
5.
Put
the baking pan in the oven and baked it for an hour. Depending on your oven, it
might cook faster or slower so check the potatoes when it’s been bake for 30
minutes, and if it’s not brown then add more cooking time.
6.
When
the potatoes are brown then it’s done.
Note: You
can also add rosemary for the roasted potatoes to make it flavorful. You can
roast sweet potatoes instead of potatoes to eat with the pollo saltado or eat
it with brown rice if you want to make it healthier.
