Quick and Easy Vietnamese Dinner for Marcia: Meatball Soup, Grilled Salmon, and Stir Fry Broccoli and Spinach
MeatBall Soup
Ingredients:
For the meatballs:
1 pound ground turkey
4 tablespoons of less sodium soy sauce
1 teaspoon Asian sesame oil
1 teaspoon cornstarch
salt
pepper
For the soup:
4 cups of water
2 tablespoons of less sodium soy sauce
1 teaspoon Asian sesame oil
1 cup of mushrooms
1 cup of spinach
green onions
chopped cilantro
Marinated the ground turkey with the ingredients listed in a mixing bowl and then put in the refrigerator overnight. Shape the ground turkey into meatballs.
For the soup, add the water, less sodium soy sauce, and sesame oil in the pot and let it boil. Then add the mushrooms, spinach, and green onions. After add the meatballs and let it cook for 5-10 minutes. Put soup in a bowl and put chopped cilantro on top. Eat and enjoy.
Grilled Salmon
Ingredients:
2 tablespoons of olive oil
4 tablespoons of chopped ginger
2 tablespoon of chopped garlic
3 tablespoon of less sodium soy sauce
1 tablespoon of brown sugar
salmon
Add olive oil, ginger, garlic, soy sauce, and brown sugar in a mixing bowl and stir all the ingredients. Add the salmon in the bowl and coat it with the marinade. Cover it and put it in the refrigerator for 6 hours.
Preheat oven to 375 degrees and baked the salmon for 15 minutes to 20 minutes depending how much thick the salmon is.
Stir Fry Broccoli and Spinach
Ingredients:
2 cups of broccoli
1 cup of spinach
olive oil
salt
pepper
Heat pan in medium heat and add olive oil. Add broccoli and stir it. Add spinach and stir it with broccoli. Season with salt and pepper. Its done when broccoli is tender and spinach is is cooked.
