Peruvian lunch for Sherry and dinner for Micha and Alesssandro: chicken fritters, lomo saltado, and fried rice
Andean Chicken Fritters - Chicharrones Andinos De Pollo
Ingredients:
1.5 lb of chicken breast
salt and pepper
chopped cilantro
squeeze orange juice
squeeze calamansi juice
1 1/2 cup of all purpose flour
1 cup cooked quinoa
2 lightly beaten eggs
Cut the chicken breast in cubes. Season it with salt and pepper. Add garlic, cilantro, orange juice, and calamansi juice and mix it. Marinate it in the refrigrator for an hour. Put the flour in one bowl, the beaten eggs in another bowl, and the quinoa to a third bowl. Dip each chicken pieces in flour, beaten eggs, and then quinoa. Put in a plate. Preheat oven to 375 degrees. Baked chicken pieces for 45 minutes - 1 hour, it depends on your oven so just check when it's already cooked.

Lomo Saltado - Stir Fried Beef Fillet
Ingredients:
beef tenderloin
1 red onion
4 small tomatoes
salt
pepper
2 tablespoons of less sodium soy sauce
2 tablespoons of white wine vinegar
1 tablespoon of olive oil
Cut the beef into strips. Season it with salt and pepper. Cut onions and tomatoes into strips. Heat the pan in over high heat and make the pan really hot. Stir fry the meat until it's brown and usually 2-3 minutes. Put the meat in a plate. Heat the pan in over medium heat and stir fry the onions until transparent and add tomatoes. Add the meat, soy sauce, and white wine vinegar. Turn it off when there's only a little bit of sauce. Stir it all together and served it.
Note: you can also add cilantro on top of it when you served it. also add aji amarillo when you cook it. I made sweet potato fries to eat it with the lomo saltado but i didn't take a picture. You eat the lomo saltado with french fries.

Fried Rice with Mixed Vegetables and Asparagus
Ingredients:
2 cups of cooked mixed wild rice and brown rice
2 carrots
1 cupsof asparagus
1 cup of green onions
1/2 onion
garlic
1-2 cups of mixed vegetables
2 tablespoons of less sodium soy sauce
Chopped green onions, onion, garlic, asparagus, and carrots. Heat pan in over medium heat and add the onions. When onions are transparent, add garlic. Then add carrots, asparagus, and green onions and stir fry. Add rice and mixed vegetables. Stir it and add soy sauce. Season it with salt and pepper. It's cooked when the vegetables are tender and soft.
