Warm Kale and Quinoa Salad





Ingredients: 

2 cups of red quinoa
4 cups of water
3 cups of kale
2 tablespoons of lemon juice
1 tablespoon of olive oil
himalayan salt
black pepper

Instructions:

1. Wash quinoa and drained. Add quinoa and water in a pot on medium heat. Reduce heat to low, and cover. The quinoa is cooked when there is no more water.
2. Add the kale on top of the quinoa and  add olive oil, lemon juice, himalayan salt, and pepper. Mixed it all together. It can be served warm or cold.

note: in the original recipe, you can add currants, raisins, or dried cranberries and pine nuts, raw or toasted or silvered almonds too. I didn't have any of those so I just kept it simple.
